2006 VINTAGE
PRODUCTION:
Produced from vines 5 to 20 years old, and from vineyards located on
the edge of the coastal ranges which provide a unique maritime
microclimate which allows a slow maturity. The grapes were destemmed
and whole bunch pressed. Fermentation in stainless steel, with
some skin contact prior to pressing. The clarified juice was
fermented using selected yeast strains at temperatures between 13
and 15șC. No malolacic fermentation. The wine was left
on its lees for 2 months and cold stabilized at -4șC.
WINEMAKERS TASTING NOTE:
Bright yellow in colour with green notes. On the nose, the
wine has intense white flower aromas with some tropical fruits and
lime. On the palate, the wine has mineral notes with citrus
fruit flavours. The crisp acid supports the fruit and gives
the wine great persistence.
